Born and raised in the Erie area, I fell in love with food when I was very young helping cook anything I could get my hands on. I knew before I was 10 years old that I wanted to cook professionally for the rest of my days. Working for a stint in Virginia, cooking followed me all the way through four years at Johnson & Wales in Denver, where I fell in love with the food and culture of Mexico at LoLa, an award winning Coastal Mexican restaurant headed by Jamey Fader (Denver's chef of the year at the time). I had the opportunity in 2007 to come back home as the sous chef of 1201 Restaurant & Wine Bar and after 6 months decided to purchase the restaurant with my business partner J.B.
1201 Kitchen was born, where my love for both Latin and Asian cuisines could come together. Both are simple, both require proper technique and an understanding to execute properly. I believe in simple food cooked with integrity and love, from the best products that I can get my hands on. The bold flavor of griddled chiles, a smoky pork broth, the sharp salty bite of pickled onions, the wonderful simplicity of raw fish...I am truly excited to get into the kitchen everyday to cook. I cook to share what I love most, with the people I love most, in the place I love most.
In my spare time (!) I cycle for Team Competitive Gear, paint pictures of french speaking robots, consume anything my mother makes, sleep in trees, drink excessive amounts of hot tea, enjoy deep meaningful conversation, wrestle my beagle Abraham Lincoln, travel for food and give back in any way I can to worthwhile causes that make a positive impact in people's lives.
