kitchen guacwith roasted almonds, jalapeño, queso anejo. served with smoked cashew & serrano-piña salsas.

green tea yogurt with caramelized grapes, roasted chestnuts, acai

christmas hash: crispy sweet potato, house made chorizo, greens, smoked almond-chorizo romesco.

All classes will be run by chef Dan Kern and 1201's sous chef Adam Williams!  We will include a beautiful certificate to present as a gift!!

Class #1: Contemporary Japanese Comfort Food, January 13th 12:30 pm-3:30pm

Students will explore basic and intermediate technique for creating contemporary japanese comfort food! Including but not limited to:
DUMPLINGS (gyoza): creating dumpling doughs, fillings, techniques for pan frying, steaming & pairing sauces!
JAPANESE BROTHS: creating simple, savory japanese broths that can be used for soups, ramen, etc.
KNIFE SKILLS: using simple knife techniques to accomplish new & creative dishes
OKONOMIYAKI: preparing one of Japan's most icon street food dishes!
BEVERAGE PAIRING: using traditional and non-traditional drinks to pair with your japanese food!

All classes include food & beverages! We eat & drink what we create!

Class #2: Contemporary Mexican Comfort Food, January 20th 12:30pm-3:30pm

Students will explore basic and intermediate technique for creating contemporary mexican cuisine! Including but not limited to:
ENCHILADAS/TAQUITOS: learning the technique of properly braising meat, rolling enchiladas and taquitos, and creating the right sauce!
KNIFE SKILLS: using simple knife techniques to accomplish new & creative dishes
MOLÉ: creating one of mexico's most beloved dishes
BEVERAGE PAIRING: using traditional and non-traditional drinks to pair with your japanese food!

All classes include food & beverages! We eat & drink what we create!

Cost:$75 per person. Includes food, beverage and all necessary items and equipment to complete class.
All classes are capped at 15 students
